My mom bought a ginormous watermelon last week and, although they enjoyed it, it didn’t take long for the girls to be tired of it. But since we had more than half of it left, I wanted to find something to do with it. By accident, I found this great recipe for watermelon sorbet! It is so refreshing and delicious that I had to share it with you.
I would just provide you with the link, but the recipe I found uses an ice cream maker. I don’t have an ice cream maker (although I think having one would be fun!), so I wanted to give you my method of making it without the ice cream maker since I’m sure many of you are like me. Ingredients needed to make Watermelon Sorbet:
- 8 cups of cut, seeded watermelon
- 1 cup of water
- 1/2 cup of sugar
- 1/3 cup of lemon or lime juice
First, I cut the watermelon into little pieces and removed all the seeds (the white seeds are fine to leave in). This gave me about 8 cups of watermelon.
Now this is the part that makes a difference in having the ice cream maker or not. Freeze the cubed watermelon.
While the watermelon is freezing, it’s time to make a sugar syrup.
Ingredients for the sugar syrup:
- 1 cup of water
- 1/2 cup of sugar
To make the syrup, dissolve the sugar into the water in a sauce pan over medium heat. Bring it to a boil. This makes a nice sugar syrup. You could also double the amount of sugar, but the watermelon is sweet enough that I didn’t find it necessary.
After the watermelon has frozen, put the watermelon, syrup, and lemon or lime juice into the food processor and puree. The lemon or lime juice will help even out the super sweet taste of the watermelon.
When it has blended, pour into jars or containers and allow it to set in the freezer for a little while. My kids just dove right in, but letting it freeze up made mine super tasty and refreshing. And, if you’re feeling minty, add some fresh mint leaves.
Other additions I saw that other people added were blueberries and chocolate chips, both for the essence of the seeds that we removed. I hope you enjoy this wonderfully refreshing summertime treat!
