Seriously! This is really the best mac and cheese I’ve EVER had. I had a hankerin’ for some, but I only had a not-so-good recipe. It was okay, but…no. It was terrible. Not worth making ever again. After checking out some recipes online, I found one that looked good enough for me to take the time to try it out (it has to be worth it if I am putting in the effort with at least one “helper” in the kitchen, if not more). It was SO worth it. And the best part is that everyone loved it as much as I did. So, I have for you, the recipe for the most delicious macaroni and cheese you have ever and will ever try. I tweaked the original a bit to make it more of how we would like it. Feel free to do the same for your family!
Ingredients
- 1/4 c butter
- 1/2 c flour
- 1 1/2 c milk
- 1 c sour cream
- 2 1/2 c dry macaroni
- 8 ounces cheddar cheese
- 8 ounces mozzarella cheese
- 1/2 t salt
- 1/2 t pepper
- 5 strips of bacon
- 2 cups of raw spinach
{Recipe}
- Cook the macaroni as directed on the package. Drain and set aside.
- Cook the bacon separately.
- Cook the spinach separately.
- Mix the macaroni, bacon, and spinach, making sure the spinach leaves are well separated.
- Melt the butter in a large pot (I used the pot I had cooked the macaroni in).
- Mix in the flour until blended.
- Add in the milk a little at a time and mix until thickened.
- Stir in sour cream. Bring the mixture to a boil, stirring frequently. Allow it to simmer for a couple minutes. This should get very thick. Remove from heat.
- Add in salt, pepper, and cheeses and mix together. The cheese will melt nicely.
- Mix in the macaroni/bacon/spinach mixture and blend together until the noodles are well covered.
- Bake in a baking dish (I baked mine uncovered for the entire time) at 350 for 30-40 minutes or until golden brown on the top.

I paired our mac and cheese with a nice NY strip steak seasoned with Montreal Steak Seasoning (Scott’s was wrapped in bacon) and sugar snap peas. Not a bite was left over and all three girls had at least seconds on mac and cheese. I’m telling you…AMAZING! My girls have milk allergies, so something like this is a rare treat in our house and might be followed by tummy aches, but when asked, they all found it worth it to indulge for this evening. Also, I’m sure the calories are outrageous on this scrumptious dish…however, I did throw in spinach, which the girls loved…ummm I also put in bacon, which might just negate the spinach. I think adding some tomatoes would also be pretty yummy. I’m the only one in my house who would like that, so I left them out this time. If you get around to trying it, let me know how it turns out.
