{Menu Mondays} Corn Chowder with Sausage

This one makes my mouth water just thinking about it.  It’s a great one to make this time of year–even here in Florida where the cold doesn’t bite at your cheeks.  Which is very nice of it, actually.  Corn chowder!

I’ll tell you a secret.  My family, all except for Scott, has a real problem with dairy.  Our bodies hate it.  But sometimes, every so often, we become rebels and we pretend that our bodies can process dairy as if there weren’t tiny soldiers with very sharp swords piercing our abdomens from the inside during digestion.  As a family we eagerly hold our heads high and say, “Pass the cheese.”  This is one of those times.  And by golly, it’s worth it.  Yes, even an hour later when we’re doubled over, groaning, we remember fondly the taste that was the corn chowder.  And we accept our fate.  It.  Was.  Worth it.

Corn chowder is easy to make and, other than a bit of prep work, can be done in the crock pot.  Yay!  I do love the crock pot.  I love getting all my cooking done in the wee hours of the day and knowing that I don’t have to do it later.

Ingredients

  • 4 cups of organic Milk or cream
  • 1/4 cup of Butter (real butter, no fakesies)
  • salt (to taste)
  • pepper (to taste)
  • 1 onion
  • 3 cloves of garlic
  • 1/4 cup of unbleached flour
  • 1 can of corn or fresh or frozen.  Just leave out the GMOs, please.  I say this for your own benefit.
  • 4 potatoes
  • Sausage (optional)

Instructions

1.   Melt the butter in a pan.

2.  Chop the onion and garlic and add to the melted butter.  Saute for 5 minutes or until tender.

3.  Add onion and garlic to the crockpot.  Cube and saute the sausage in the same pan that you cooked the onions in.  It’s all going to the same place anyway! Be sure to get as much of the grease off of the sausage as you can.  It will help avoid the grease layer on top of the chowder at the end of the cooking process.

4.  Add to the crockpot the corn, sausage, and chopped potatoes.

5.  Mix together milk, flour, salt, and pepper separately.  And see if you can get the cutest guy in the world to wisk it together for you.   Oops!  Too late.  He’s taken.

6.  Once mixed, add the milk mixture to the crockpot.  Stir it up!

7.  Put it on low and let it cook for 6ish hours.

8.  Then, my friends, it’s time.  Not that you haven’t already sneaked a few spoonfuls.  What, you have to taste it!  It’s a new recipe.  What kind of person would serve a dish when they didn’t know how it tasted.  You are thinking only of your family here.  So tuck your napkin into your collar and dig in!

This chowder is served delightfully with cheddar cheese on top, maybe some green onions, and of course flaky, buttery biscuits for which I have an amazing recipe.  I’ll share it with you soon.  Enjoy!
